Dear Participant,
I
would like to let you know about an opportunity to participate in a
research study about Tasting Broccoli Kimchi.  As Kimchi is gaining its popularity in the western world as a health food, a new Kimchi recipe that
could enhance its cancer preventive function has been developed. We
would like to find out if the taste of this new Kimchi recipe is
acceptable to consumers. This study will involve tasting 4 Kimchi
samples, a survey, and a focus group discussion. This study is being
conducted by Dr. Yeon Bai from the Dept of Nutrition and Food Studies at
Montclair State University. 
It will take about 30-50 minutes of your time.  If you are 18 years of age or older and have tasted Kimchi before, you may be eligible to participate.  
Please note that you are not eligible to participate in this study if... 1.      You are a student in Dr. Bai¡¯s class this semester or  2.      You
have food allergies relevant to nappa cabbage, broccoli, garlic, dried
red pepper powder, anchovy sauce, salt marinated shrimp, apple, green
onions, or daikon. All
participants will receive a $5 gift card on the day of sample tasting,
and enter a raffle to win an additional $50 gift card at study closure.
